This most familiar of Vietnamese dishes' base is a hearty beef flavored stock "made to taste just like my mother used to make it," Phan says. Another traditional broth is hu thieu, which Phan recommends with egg noodles, pork and shrimp (mi tom heo). Other favorites are stir-fry dishes, all of which can be made vegan upon request; and go'i, salads made with fresh shredded cabbage, chopped basil, cilantro and fresh lime juice, then tossed with the house dressing. If you really want to sink your teeth into something, order a banh mi. These sandwiches are made with pickled carrots, daikon, cucumbers and cilantro, and served on a 6-inch bun. Flan or battered and fried banana with Nutella makes an outstanding dessert. You soon come to understand Cilantro is more than an herb; it's a philosophy.
